Ingredients
- 6 chicken thighs, boneless
- 500g chicken breast, cubed
- 500g minced lamb or beef
- 3 tbsp Tropical Heat Garam Masala
- 200g plain yogurt
- 4 garlic cloves, grated
- 1 small onion, grated
- Handful of parsley, chopped
- 2 tsp salt
- Tomatoes, onions and green chilies, for grilling
- Flatbreads, hummus and fries, to serve
Method
Step 1: Stir 2 tbsp of the Garam Masala, the yogurt, half the garlic and 1 tsp salt together. Coat the chicken thighs and cubes in it.
Step 2: Mix the mince with the remaining Garam Masala, garlic, grated onion, parsley and salt. Shape into long kofta around skewers.
Step 3: Thread the chicken cubes onto skewers.
Step 4: Grill the thighs for 12 to 14 minutes and the skewers and kofta for 8 to 10 minutes, turning, until cooked through.
Step 5: Char the tomatoes, onions and chilies alongside. Pile everything onto a platter with warm flatbreads and dips.
Marinate the chicken the night before if you can. It does most of the work for you.
