Ingredients
- 800g stewing beef, cut into large chunks
- 2 tbsp Tropical Heat Garam Masala
- 1 tsp salt, plus more to taste
- 3 tbsp vegetable oil
- 2 onions, finely chopped
- 4 garlic cloves, grated
- 1 thumb of ginger, grated
- 2 tbsp tomato paste
- 400g tin chopped tomatoes
- 500ml beef stock
- Fresh parsley or coriander, to serve
- Cooked white rice, to serve
Method
Step 1: Toss the beef with 1 tbsp of the Garam Masala and the salt.
Step 2: Heat the oil in a heavy pot and brown the beef in batches. Lift it out and set aside.
Step 3: Soften the onions in the same pot for 8 minutes, then stir in the garlic, ginger and the rest of the Garam Masala for 1 minute.
Step 4: Add the tomato paste, chopped tomatoes and stock. Return the beef, cover and simmer gently for 90 minutes, until tender.
Step 5: Uncover for the last 10 minutes to thicken. Season, scatter with herbs and serve with rice.
Add a final pinch of Garam Masala just before serving to wake the aroma back up.
